My Egg-free, Peanut-free, Gluten-free, Low Carb Life: Menu 7

This is late.. we've been sick.. not following the menu while we're sick!

Sunday - Tortilla pizzas made on Ole Extreme Wellness Tortillas (5g of carbs each!)
Monday - Elizabeth's Chicken Enchilladas
Tuesday - Green Been Casserole with Ground Beef and Cheese
Wednesday - Onion Soup
Thursday - Curried Chicken (this has quickly become a favorite for Randy)
Friday - Cheese Quesidilla
Saturday - Chili (not so low carb)

    Vaughn has been dealing with an illness now for 5 months. We've made multiple trips to Ft Wayne and Riley's. He has been on a VERY strict low-fat diet for the last two months. You would NOT believe what he can't eat or drink...it's amazing! So, I've been eating many of the same things he can. I feel like I have more energy (watch out world!lol). I ate a fast food burger for the first time last night I woke up practically running to the bathroom!!! It was an eye-opening experience. We've learned so much about hidden ingredients and what their effect on the body is.....wow! Thank God for the internet! What's really strange is this-Vaughn can't have anything with sorbitol or aspartame (among others), but the GI specialist in Ft Wayne has been having him take BeneFiber supplements since December. Guess what two ingredients are in Benefiber!?!?!? Yep, those two!!! The lifestyle change has not been easy and learning something new every day makes me feel like a sponge. Hang in there!!

  2. Oh Marla, what a mess. It's so hard to cut things out of the diet and learn to read ALL the labels.. we're getting there. It's especially important for the little guy because of his allergies... big man seems to have some gluten intolerance, but not an "allergy".. it is kind of a fun challenge for me to make our weekly menu sometimes.
